Black Bean Salad
Ingredients:
- 2 cans black beans drained and rinsed (about 7 cups)
- 2 med tomatoes, chopped
- 2 green onions, chopped
- 1 red pepper, chopped
- 2 tbs red wine vinegar
- 2 tbs balsamic vinegar
- 1/2 cups (or less) extra virgin olive oil
- 1 tsp cumin
- 1 1/2 tsp chili powder
- 1 clove crushed garlic
- fresh cilantro to taste
Directions:
- Mix beans and vegetables in a medium bowl.
- In a separate bowl prepare the dressing by mixing the remaining ingredients. Pour the dressing over the salad and mix gently.
- Let marinate in the fridge for half an hour before serving.
