Black Bean Soup
This soup is a very easy to make, delicious and nutritious. (Note: bean
and tomato can sizes are Canadian … U.S. may differ, but probably close
enough)
Ingredients:
- 1 TBS olive oil
- 1 chopped onion
- 1 large garlic clove, minced
- 2 to 4 carrots, chopped
- 1 tsp cumin
- 2 tsp chili pepper
- 4 cups vegetable stock
- 2 - 14oz cans black beans well rinsed and drained
- 1 cup fresh or frozen corn kernels
- 1 - 28oz can diced tomatoes
Directions:
- Blend half of the beans and all tomatoes in blender
- Saute first five ingredients for 2 to 3 minutes
- Add vegetable stock, corn, blender ingredients and chili pepper
- Simmer for 20 to 30 minutes
