Butternut Squash Soup
Ingredients:
- ½ TBS Olive Oil
- 1 Onion
- 3 Cloves Garlic, minced
- 1 TBS Cumin
- Hot Red Pepper to taste
- 1 Medium/large Size Butternut Squash (or Pumpkin), cut into 1 inch pieces
- ¾ Cup Red Lentils
- 1 Pear or Apple (optional), cored and chopped
- Enough Water or Veggie Stock to cover vegetables
