Cabbage Soup
Ingredients:
- 1 lb ground lean beef, pork or turkey
- 2 tbsp vegetable or olive oil, divided
- 1 large onion, coarsely chopped
- 1 small head cabbage, coarsely chopped
- 2 medium carrots, sliced
- 1 14-15oz can kidney beans
- 2 14-15oz or 1 28oz can sliced or diced tomatoes, or whole tomatoes cut up (stewed tomatoes work too)
- 8-9 cups water or beef or chicken stock - enough to cover vegetables and meat (If using water, you can add 4 - 8 reduced salt bouillon cubes, depending on how much meat flavor you want)
- 1 cup tomato or V8 juice
- 1 stalk celery, sliced
- 1 or 2 medium potatoes, peeled and cut in ½ in dice
