Egg Whites and Spinach Breakfast Dish
Ingredients:
Directions:
- One cup of egg whites cooked in a non-stick frying pan. (Spray frying pan first with Pam or other type of low-fat cooking spray)
- Steam spinach (approximately 1 cup cooked)
- Drain spinach and layer on top of cooked eggwhites (still in pan)
- Add 1/4 cup of fat-free cottage cheese on top of spinach
- Add 4 tablespoons of spicy salsa on top of cottage cheese
- Sprinkle with Parmesan cheese
- Continue to cook on low heat for about two minutes
- Optional: Can sprinkle extra Parmesan cheese while eating
