Lentil Vegetable Stew
Ingredients:
- 1¼ c. lentils, rinsed
- 4 c. water or vegetable broth or chicken broth (Swanson’s Natural Goodness Low Fat)
- 1 c. water
- 2 c. peeled & cubed sweet potato
- ½ c. chopped onion
- ½ c. chopped celery
- 1 carrot chopped
- 3 cloves garlic, minced
- 2 parsnips, chopped
- 2 tsps. low sodium Tamari soy sauce
- 2 tsp cumin
- 1 tsp coriander
- 1½ c. broccoli florets
- 1½ c. sliced zucchini
- 1 15 oz. can no-salt diced tomatoes with liquid
