Potato Cabbage Soup
Ingredients:
- 2 Russett Potatos chopped skin on
- 2 chopped carsips
- 2 chopped carrots
- 1/4 to 1/2 cabbage cut in long strips
- 1 Onion
- 1 Bay Leaf
- 1 tsp Basil
- 1 tsp Parsley
- 1/2 tsp sage and thyme each
- 1/4 tsp fresh ground pepper
- 1 can of organic cream of tomato soup
- Sour Cream
Directions:
- Cut and combine all ingredients into a large soup pot except for the tomato soup. Cover with water and cover the pot to simmer for 45 minutes.
- Five minutes before soup is ready to serve, add the tomato soup.
- Garnish each bowl with a dallop of sour cream.
