Recipe from a Reader
Ratatouille
Ingredients:
- 2 cloves garlic(chopped)
- 2 big onions(cut in half/sliced)
- 3 big tomatoes(cut in half/sliced)
- 1 medium eggplant(cut in half/ sliced)
- 1 medium suchini(cut in half/sliced)
- � cup of tomato sauce(optional but you have to add 1 more big tomato if tomato sauce is not available)
- 1 tbsp. of catsup (optional) or � carrot (sliced) - also optional if you want to make it a bit sweet.
- 1 tsp. Herbes de provence or just 1 tsp. of thyme
- 1 bay leaf
- salt and pepper
- 2 to 3 tbsp. of olive oil
Directions:

In a pan, stir fry the onions and garlic with 1 tbsp. of water for 3 to 4 minutes

Add the remaining vegetables, herbs, bay leaf, salt and pepper then cover and continue cooking over a low heat until all are cooked(but not overcooked).

Add olive oil after cooking.
Note: If you think you have cooked a lot, just add olive oil in a serving plate so the left over in a pan will be kept for other recipes like poached eggs over ratatouille, just add anchovies or ham(optional) and chili powder, salt and pepper.
