Tomato Bean Soup
This is VERY high in fibre (14+grams per serving), lycopene and other nutrients. It freezes well also.
Ingredients:
- 1 can mixed beans (black,kidney etc) rinsed
- 1 can chickpeas rinsed
- 1 large can chopped herbed tomatoes
- 1 small bag baby spinach chopped (or swiss chard or kale)
- 1 onion chopped
- 1 cup baby carrots chopped
- 1/2 cup celery chopped
- 1 cup cremini mushrooms diced small
- 3 cloves garlic minced
- 2c low sodium chicken or vegetable broth
- 1 tbsp olive oil
Directions:
- Saute the chopped and diced vegetables in the oil until softened
- add mushrooms and garlic after several minutes
- Add stock, tomatoes, chickpeas and beans. Heat through.
- Stir in chopped spinach
- Season to taste with salt and pepper, oregano, rosemary etc.
