Ground Lamb Salad

  1. Heat 1 TBS broth in a 10 inch stainless steel skillet and Healthy Sauté onion for 2 minutes and add garlic and ground lamb. Break up lamb well so it is not in big lumps. Continue to sauté for another 5 minutes.
  2. Add peas, salt and pepper and cook for another 2-3 minutes, and add tomatoes, chopped fresh mint, basil, cilantro, lemon juice.
  3. Rinse and dry lettuce leaves discarding wilted outer leaves. Place on platter and fill with spoonful of lamb mixture. Roll by hand and eat.
