Ingredients
1-1/2 cups cooked quinoa
1/2 medium onion
2 medium cloves garlic, minced
2 TBS fresh basil, chopped
1/2 medium tomato, diced
2 TBS fresh lemon juice
1.5 TBS extra virgin olive oil
1.5 cups romaine lettuce, shredded
1 TBS pumpkin seed, chopped
1/4 cup cilantro
Directions
Mix all ingredients except lettuce and cilantro.
Divide mixture and serve over lettuce and top with cilantro.
